Ham salad is an easy way to add new interest to leftovers. The salty, tart, spicy flavors of the relish, combined with Dijon mustard and mayonnaise, highlight the sweet-savory taste of baked or roasted ham. Ingredients
- 1 1/2 lbs (680 g) ham
- 1 cup (240 ml) dill pickle relish
- 1 cup (240 ml) mayonnaise
- 2 tsp (30 ml) Dijon mustard
- 1/2 tsp (2.5 ml) sugar.
Directions
- Prepare the ham by blotting it with paper towels to remove as much moisture from the meat as possible. Cut the ham into narrow 1-inch long (2.5 cm) strips.
- After draining most of the fluid from the relish, add it to the ham in a large bowl and mix.
- In a separate bowl, combine the mayonnaise, mustard, and sugar; mix well. Add the mayonnaise mixture to the ham and relish and mix well. Serve chilled.
