Singisalat, or ham salad, is an easy way to add new interest to leftovers. The salty, tart, spicy flavors of the relish, combined with Dijon mustard and mayonnaise, highlight the sweet-savory taste of baked or roasted ham. Ham salad is delicious on its own or as a sandwich ingredient. Use rye bread for the most authentically Estonian taste.

Ingredients
- 1½ lbs (680 g) ham
- 1 cup (240 ml) dill pickle relish
- 1 cup (240 ml) mayonnaise
- 2 tsp (30 ml) Dijon mustard
- ½ tsp (2.5 ml) sugar
Directions
- Prepare the ham by blotting it with paper towels to remove as much moisture from the meat as possible.
- Cut the ham into narrow 1-inch long (2.5 cm) strips.
- After draining most of the fluid from the relish, add it to the ham in a large bowl and mix.
- In a separate bowl, combine the mayonnaise, mustard, and sugar, mixing well.
- Add the mayonnaise mixture to the ham and relish and mix well.
- Serve chilled.
