Roosamannavaht (Cranberry Pudding)

Roosamannavaht is an attractive pink pudding made from cranberry or black currant juice boiled with farina or semolina. It is a traditional Estonian dessert that is light and fluffy as well as tangy with lemon zest. This dessert can be prepared the day before; pour into glass dishes, cover with cling wrap, and refrigerate.

  1. In a non-reactive pan set over medium-high heat, bring juice, lemon zest, and sugar to a gentle boil.
  2. Sprinkle in semolina and quickly mix it in.
  3. Simmer on medium-low for 20 minutes, stirring to prevent sticking.
  4. Whisk mixture until light and fluffy.
  5. Spoon into serving dishes and allow to cool.
  6. Cover with cling wrap and refrigerate for an hour before serving.
  7. Serve garnished with shaved chocolate.
